With the colder weather drawing in on
us do not despair because now it is time for all the fantastic shellfish.
Beautiful Maldon oysters are now in their prime and give a clean
fresh taste of the sea. Sensational palourde clams from Poole in
Dorset are proving ever popular for that classic dish spaghetti
vongole or just sautéed with olive oil, parsley and garlic.
And of course we welcome back onto our counter those beautiful Scottish
mussels from Demlane; for the perfect Moules mariniere or for a
slight variation try using some Normandy cider and Creme Freche.
The boys on the south coast have been landing some sensational hook
and line caught wild sea bass so all you need do is roast them with
olive oil, lemon and rosemary.
