With the summer months now in sight those much-loved winter
treats, such as the succulent shellfish, will slowly disappear,
to be replaced by the quintessential British seasonal favourites.
The fantastic month of May yields such delights as Gulls’
Eggs, traditionally hard boiled and dressed with celery salt,
the beginning of the Scottish wild salmon and sea trout and
those much desired early season native lobsters. With the much
appreciated settled weather that the next few months present,
we can look forward to continuity in our supply. With the majority
of fish returning to prime condition after their spawning period
the next four months offers wet fish at it’s best. We
look forward to seeing fantastic creel caught Scottish langoustine,
an abundance of hook and line caught Cornish mackerel, South
West otter trawl caught lemon and dover sole, East or South
West hook and line caught red mullet and a plentiful supply
of our fantastic hand picked Cornish white crab meat. Essentially,
one must not forget the unmistakable taste of the sweet East
Coast picked samphire grass, blanched, and dressed with butter
and crack black pepper – a perfect addition to any summer
fish dish.
